Banana Chocolate Chip Muffins

Banana Chocolate Chip muffins with flax and chia seedsBanana Chocolate Chip Muffins (using Pamela’s mix)

2 eggs
4 ripe bananas (mashed)
2 tsp vanilla
½ cup water
¼ cup sugar
¼ cup mini chocolate chips
2 Tbs ground flax seeds
2 Tbs ground chia seeds
2 ½ cups Pamela’s Baking/Pancake Mix

Preheat oven 350°F
Mix everything with a wooden spoon and fill greased muffin pans. I use silicone mini muffin pans.
It makes about 36 mini muffins.
Bake for about 20-25 min

(These muffins are low fat. I don’t put any butter or oil in them. The dry mix says Total Fat: 3.5g in 1/3 cup of dry mix.  Ingredients in the mix are: Brown rice flour, white rice flour, cultured buttermilk, natural almond meal, tapioca starch, sweet rice flour, potato starch, grainless and aluminum-free baking powder (sodium bicarbonate, sodium acid pyrophosphate, potato starch), baking soda, sea salt, xanthan gum). My kids love these muffins.
