Gluten Free Black Bean Brownies

Gluten Free black bean browniesThese brownies are very easy to make. They are made without any flour, with blended black beans. They have a different texture then regular brownies made with flour, but you can’t taste black beans at all. For dairy free version use oil instead of butter.
I like to put some kosher salt on top right after they are done.

Makes 9 brownies (2 inch x 2 inch)

Black Beans

I used these black beans

Ingredients:
1-15.5 ounce can black beans
3 large eggs
1/4 cup of butter (melted) or for dairy free version use 3 tablespoons canola oil or other vegetable oil
1/2 cup cocoa powder
2/3 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla
1/4 cup bittersweet chocolate chips or semisweet ok too

Preheat oven to 325 F. Spray an 8-inch square baking pan with non-stick spray.
Pour black beans in to a colander and thoroughly rinse all of the bean juice off of them.
Add the rinsed beans, eggs, melted butter or oil, cocoa powder, sugar, baking powder, and vanilla to a blender. Blend until very smooth.

Pour batter into pan and sprinkle with chocolate chips. Bake for 25-30 minutes until cooked through. Add some sea salt on top if you’d like. Let cool, cut into 9 pieces, and enjoy!
