(Russian Gnocchi) Gluten Free Cheese Dumplings

Russian Gnocchi - Gluten freeThis is a modified Gluten Free Version of the old recipe for Cheese Dumplings that my family used to make in the Ukraine. They are called (“Lenivie Vareniki”), translated in English means “Lazy Dumplings”. They are so easy and fast to make, and that’s why they are called Lazy Dumplings.

Ingredients:

  • 1 package of Farmer’s cheese
  • 2 eggs
  • 8 Tbs of Gluten Free Flour (I use Cup 4 Cup Gluten Free Flour – You can buy it in Williams-Sonoma, or on Amazon.com)
  • Olive oil
  • 1 Tbs of sugar

Mix farmer’s cheese and 2 eggs together, add a little sugar, and about 8 Tbs of Gluten free flour. Roll the dough into small balls and roll them on the cutting board, covered with flour into thin strips. Then cut them into small pieces. Add as much flour as needed. The dough tends to be very sticky.
Boil water in a pot, add a little olive oil. When it starts boiling, add the dumplings in. Boil about 3-5 min. As they rise to the top, it’s ready. Drain the water in the colander. Make sure you stand over the boiling pot, as it can overboil easily. Serve with jelly, or sour cream.
By the way, great project for the kids, especially the rolling part.  Mine love these, especially if they made it.
